Easy Chicken and Cabbage Recipe for More Weight Loss

Chicken and veggies…
Anyone who has ever been on a diet knows this is the go-to meal because it is supposed to be a low-calorie, no-carb meal that is light and will help you lose weight. But this isn’t all it is… it is also boring and that is because the typical diet meal consists of boiled chicken and steamed broccoli. I don’t know about you, but there is only so much bland chicken I can eat.
Although boiled chicken and veggies may be healthy, it isn’t really a meal that you look forward to when you are hungry.
The way our food taste matters to us. If you think about it, it is such an important factor in our society and we put a lot of emphasis on being able to sit and enjoy a delicious, savory meal. It is why we choose to eat out and why we choose one restaurant over the other. It is why we alternate what we eat every day instead of just making the same easy meal day in and day out.
If the way your food taste didn’t matter, many of us wouldn’t over-eat and it would be so easy to just switch to a healthy diet because we wouldn’t care what we were eating. So when it comes to eating healthy, I need to still be able to enjoy my food. This was non-negotiable.
I’ve sacrificed flavor for the sake of losing weight and I remember how miserable that was. It made it difficult to stick to my diet (and I often failed) because I no longer looked forward to my meals. In fact, I started to dread my meals. Eating was almost a chore and I wasn’t sure if it was worth it.
This is why I wanted to make sure that the healthy food I was making was still going to taste good and satisfy me. So here is my version of chicken and veggies, or rather, my version of Chicken Cabbage.
Losing weight was hard enough and if I wanted to be successful I knew I had to enjoy the food I was eating. This is why I am so excited to be able to share recipes with you, and why I created my Custom Meal Plans. I wanted to provide you with the tools you needed to be successful too. I want you to look forward to your meals and to be excited about the results you will begin to see. I want to help you see the results that I saw and support you on your journey.
This recipe is so easy to make and almost cooks itself within an hour.
Chicken and Cabbage
1 head of shredded cabbage ( I like to use green and red cabbage and it will yield about 5-6 cups)
1 lb of chicken, cubed
8 oz of stewed tomatoes
1 tbsp tomato paste
32 oz chicken stock
4 cups water
- Spray a skillet with olive oil and place over medium heat. Once hot, add your chicken and saute until it is cooked through.
- In a large crockpot add all of your ingredients and let it cook for 45 minutes. When it comes to your celery and carrots, you can add as much or as little of these veggies as you would like.
- Serve and enjoy!
That is it! It is that easy. And the great thing about this is that it will make enough for the whole family or leave you with enough leftovers to meal prep throughout the week. Try this recipe out and let me know what you think. I hope you enjoy it as much as I do.
