Let’s Make Taco Tuesday Healthy!

One of my favorite days of the week is Taco Tuesday because who doesn’t love tacos!?
We don’t normally think of tacos as being healthy, but they can be really good for you if you know how to cook them right. With the right ingredients, prepared in the right way, you can be eating clean tacos that will help you lose more weight.
Tacos are not your typical healthy dinner, and that is because of the tortillas we put them in and all the cheese and sour cream we like to top them with. Cut down on the toppings, use a lean meat like turkey, and swap your crispy taco shells for crispy lettuce and you’ve got yourself a crunchy, delicious taco!
This Tuesday follow the recipe below and bring Taco Tuesday back to your house!
Turkey Tacos
Ingredients:
- > 6 oz diced bell peppers
- > 2 oz diced onion
- > 4 oz chopped green onions
- > 1 lb ground turkey
- > Taco seasoning (to taste)
- > Iceberg lettuce leaves
- > Salsa of your choice (or sliced cherry tomatoes)
Instructions:
Spray a large skillet with cooking spray and place over medium-high heat. Add your bell peppers, diced onions, and chopped green onions to the pan and sauté for about two minutes. Then add your ground turkey to the same pan and your taco seasoning.
Cook for about 5-8 minutes, breaking the turkey up with a spatula and mixing all of your ingredients together.
Once the meat is cooked through, scoop some out and into your lettuce shell. Top with a spoonful of your favorite salsa, or sliced cherry tomatoes and enjoy!
Makes about 8 tacos
Now you and your whole family can enjoy taco night! These are great because whether you are on a Custom Meal Plan or not, you can munch down on these without the worry of ruining all the progress you are making.
This sounds great and is something I’m going to try!! I was wondering also, how good it would taste also, if I were to use cabbage leaves instead of the iceberg lettuce leaves? I love raw cabbage and have put shredded cabbage in my tacos in the past so I’ll bet it would taste just as good using a cabbage leaf. Also, the cabbage leaf would be little bit more easy to handle. What do you think?
